Slimming World Seafood Paella

Place a paella pan or large frying pan sprayed with low calorie cooking spray over a medium-low heat and stir-fry the onion and garlic for 4-5 minutes, or until softened.

Stir the saffron threads and turmeric into the chicken stock, then add the stock to the pan and stir in the smoked paprika. Bring to a simmer, then add the paella rice. Stir once, then cover and leave to simmer gently for 15-20 minutes.

Add the seafood, roasted red peppers, asparagus, peas, carrots and runner beans. Cook for a further 10 minutes, stirring occasionally, until the rice is soft but not mushy, the vegetables are tender and the seafood is warmed through. Season well and stir in the parsley.

Minute Seafood Paella

This slimming friendly Seafood Paella really brings a bit of Spanish sunshine to dinner time – no matter what the weather’s like outside!

We used Lidl’s Scottish Cooked Mussels in White Wine Sauce for this Seafood Paella – paella always tastes better with a splash of white wine! You can also buy these mussels in a garlic butter sauce which is amazing too!

When you’re making paella, it’s really important to use the correct rice. Long grain or basmati rice won’t work, so you should choose either paella or risotto rice for this recipe. Don’t forget that making paella is very different to making risotto, so don’t be tempted to keep stirring this like you would a risotto!

This Seafood Paella easily serves 3 people and it makes a fantastic dinner party dish. Served in the pan at the table, it’s really got the wow factor – no one will ever guess how easy it was to make!

You may have seen the #lidlsurprises advert on TV for Lidl Mussels. You know the one. A guy is very sceptical about where the mussels come from, so he’s then sent off to see where they are produced.

We have to admit that we were also a bit wary about the quality of the mussels from Lidl. It’s probably just human nature to question how something that doesn’t cost an arm and a leg can be high quality. So, with this in mind, Lidl sent us to the Isle of Mull!

We didn’t get to go on the mussel boat – which considering the wet and windy weather may have been a good thing! – however, we did get to see the very Loch where the mussels are produced, and we have to say it was beautiful.

The water is perfectly clear, and the air is so fresh. The only way to describe it is like the smell of the sea with a hint of pine. The mussels are caught on ropes – almost like a swing really!

While we were on the Isle of Mull we were also lucky enough to visit Cafe Fish in Tobermory. It’s the only place on the Isle of Mull that serves the very same mussels that are sold in Lidl.

We eat a lot of seafood, and the seafood from Cafe Fish is the best we’ve tasted. Ever. If you ever get a chance then it’s well worth a visit.

Finally to round off our little mussel adventure we attended the Lidl Mussel Beach event, which brought the Isle of Mull to London.

Another thing to mention is the mussels from Lidl are MSC certified. This means that the seafood has been caught by fisheries that actually care about the environment. The MSC set standards for sustainable fishing and supply chain traceability. That can only be a good thing for the fish, us, and for seafood supplies in the future.

As a guide, an average man needs around 2, 500kcal (10, 500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2, 000kcal (8, 400kJ) a day. In a paella pan or very large frying pan, spray a little low calorie and cook the chicken until it starts to brown.

Remove the lid and stir in the Lidl mussels (including the sauce) and place the whole tiger prawns at regular intervals on the top of the paella.

To start your Seafood Paella, you’ll need to cook your chicken until it starts to brown before you add any of your other ingredients.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Seafood Paella in the fridge for one day.
