White Fish Paella

1. Fill and boil your kettle. Peel and finely chop the onion. Dice the tomatoes. Warm a deep frying pan or wok for 1 min, then add 1 tbsp olive oil and the diced veg. Season with a pinch of salt and pepper. Cook, stirring now and then, for 5-8 mins till the veg have started to soften.

2. While the veg fry, peel and grate or crush the garlic. Finely chop the parsley stalks (keep the leaves for later). Finely grate the zest from the lemon. Crumble the stock cube into a jug and stir in 600ml hot water from the kettle to dissolve it.

3. Stir the garlic, parsley stalks and lemon zest into the veg. Add 1 tsp each smoked paprika and turmeric. Cook and stir for 1 min.

4. Stir the risotto rice into the pan to coat it into the spices, then pour in the stock. Pop a lid on the pan, or cover the pan with a baking tray. Bring to the boil, then turn the heat down and gently simmer for 20 mins till most of the water has been absorbed. Stir occasionally.

5. While the rice simmers, squeeze around 1 tbsp juice from the lemon into a small bowl. Whisk with ½ tbsp olive oil and a pinch of salt and pepper to make a zesty dressing. Set aside for later.

6. Add the fish pie mix to the rice pan and gently stir to mix. Pop the lid back on the pan and cook for 4-6 mins till any remaining water has been absorbed. Take the pan off the heat and let it steam, lid on, for 2-3 mins to finish cooking the rice and the fish. The rice should be tender and the fish will flake easily when pressed with a fork.

8. Serve the paella on warm plates with the salad on the side. Chop the remaining lemon into wedges for squeezing over. Garnish with the parsley leaves, roughly chopped.

9. Pick Your Rice This paella is made with organic risotto rice, which has a similar stickiness to the short-grained Spanish bomba rice that is typically used to make paella in Spain. If you have bomba rice (often called Calasparra) in your kitchen cupboard - or sushi rice - you can use them in this recipe instead of the risotto rice.This tasty Fish Paella is full of veggies with just a light touch of seafood, for those who aren’t quite ready to tackle a full out seafood paella.

While there are three classic types of paella: seafood, mixed (meat and seafood), and Valencian (meat, green vegetables, and beans), like many dishes that are rooted in tradition, paella is more of a technique than a set recipe.

Hopefully I’m not over-simplifying things. But, looking at the dish this way helped us to take paella from a seemingly un-approachable feat, to quite a tasty challenge.

Meat is sauteed in olive oil. Vegetables and seasonings are then added and sauteed. Next, the rice is added. Finally, the water or broth is added, along with any seafood, and the dish is simmered over a fairly high heat, uncovered andundisturbed, until the rice is cooked.

Hi Your recipie has tomatoes down twice is this a misprint if so I take it that the toms go in after the rice.

Seafood Paella + Homemade: Fish Stock

Great tutorial! - couldn't find anything online on how to make 'fish-fillet' paella as don't eat exotic seafood. However I do love spices and so added saffron, lemon juice and Paprika to the Chicken stock along with the peas and celery. Also substituted the mushrooms with Cumberland sausages as wanted to make a meaty version - amazingly delicious!. Thanks hugely for the recipe, starting simple is so important before contemplating more challenging versions.

Super! With a very limited pantry selection that included mushrooms and fish, I found your recipe. Eeeh gads, all of the fish recipes that call for mushrooms include canned cream of mushroom soup. NOT what I was looking for. I was initially considering some sort of soup, but paella is an easy can do. People who know me well,  know how much I love rice. Rice in any form is my absolute favorite meal to eat. I had some other recipe planned for you today but since yesterday I am having recipe disasters! I have been working on this salad recipe and still it’s far from being perfect. So I started working on this rice dish and it came out amazing in my first try. Paella is basically a rice dish with vegetables and usually some sort of meat all cooked together in a pot. Paella to me reminds of Indian rice dish called “Pulao” which is nothing but rice with vegetables and some sort of meat though meat is totally optional and so is it in paella.You can use normal basmati rice or if possible find these amazing individually portioned 

As I used 4 packets here and knew exactly well that it’s perfect for 4 servings! See you don’t overeat that way!

Easy Spanish Seafood Paella Recipe {no Paella Pan Needed!}

 The technique is somewhat different and so are the spices used but both are equally delicious. I always wanted to try paella when in restaurants but always they had some sort of meat which I wasn’t comfortable eating. But few years ago, we tried this Spanish restaurant in Chicago and they had paella with chicken and as you might have guessed, I just had to get it. And it’s funny cause even though I enjoyed it so much, I never thought of making it at home. But now with my ongoing fish obsession, I just had to make paella.

This one pot Seafood Paella gets all done  in just ONE POT (oh yes!). Yes, less dish washing and half gets cooked on the stove and the rest gets done in the oven while you are setting your table and doing other chores before dinner which you probably shouldn’t be doing ( as in my case those chores like painting my nails, getting hooked up on watching my favorite show have led to burning of uncountable dinners! Oops). It’s an easy weeknight or even weekend meal option and is packed with flavors. You can throw in whatever veggies you have on hand and whatever meat you feel like. You can even make it vegetarian and substitute meat with paneer (Indian cheese) or tofu.

I usually like making it in big batch and keeping it in an airtight container in the refrigerator to eat for busy weeknights. Just warm up in the microwave and it's ready to eat.
