There are many versions of paella, with variations containing anything from chicken and pork to rabbit and snails. The popular version outside of Spain usually contains a variety of seafood as well as chicken and chorizo.

Paella uses a special type of short-grain rice, such as Bomba, which absorbs a lot of stock without losing its bite. The rice at the bottom of the paella is supposed to get a little golden and crusty.

Paella in a slow cooker? You bet! I should clear one thing first of all – this is NOT anything like the traditional recipe, but it IS very easy to make and incredibly tasty. Think of it as an easy paella for home cooks!

So if you want a super yummy rice dish without any of the fuss, this crock pot paella is for you! Let’s take a look at what you will need.

Chicken and chorizo is such a fabulous combo with amazing flavour! Take a look at my Chicken Chorizo Stew – looks amazing, right? If you prefer you can make this recipe with just those two… but why not add shrimp into the mix?

If you are serving this as a family meal I would say stick with shelled raw shrimp (prawns) – young kids tend to fuss over having to peel the shrimp.

But if you can find good quality jumbo shrimp then add them whole – the shells and heads will bring so much flavour to the cooking broth.

And if you want to inch a step close to Spanish paella you can add mussels and clams too! Maybe save those for a special occasion though, they are quite pricey.

For a stovetop paella I would definitely opt for Spanish short grain rice. But when I tested this paella recipe in my slow cooker with Bomba rice it wasn’t a big success.

I recommend using long grain rice (such as Uncle Ben’s) instead – it cooked really well in my crockpot without turning mushy. Another plus is that this is easier to find and less expensive than specialist paella rice.

Cooking rice in a slow cooker is actually a great way to make one-pot meals. Make sure to use the type specified as different types of rice cook absorb water and cook very differently .

If you slow cooker allows for searing (like this Morphy Richards Sear And Stew) then add the oil and heat. Add the chorizo, onion and peppers sauté, stirring, until the chorizo starts to release some of its spicy oil and vegetables soften. Alternatively do this in a pan and transfer to the slow cooker.

Remove and discard the bay leaves and check the seasoning. Stir in lemon juice and chopped parsley. Turn onto a platter, serve with lemon wedges and enjoy!

When I’m having one of those days where I don’t want to think about dinner too much, I reach for my slow cooker. There are too many times when dinner time rolls around, and I’m just tired and don’t feel like making dinner. Does anyone else feel this way? Slow cooking to the rescue! Sometimes it takes a bit of prep time to get the slow cooker meal rolling, but at the end of the day you are glad you did it!

This Slow Cooker Paella isn’t a “dump and go” kind of slow cooker recipe like my taco soup or chicken santa fe. There’s a little stovetop cooking involved, but then everything will cook together for a longer period in the slow cooker. It’s worth the extra work since traditional paella has a much lengthier cooking process.

This Slow Cooker Paella recipe comes from The Everything Green Mediterranean Cookbook by Peter Minaki. Peter is one of the first people I met on the internet back in my early days of blogging (Peter has a Greek food blog: Kalofagas). Having also written The Everything Healthy Mediterranean Cookbook, Peter is an expert in Mediterranean cooking.

The Mediterranean diet focuses on eating fresh veggies and fruits, whole grains, olive oil, seafood, lean meats and nuts. It’s a diet that is recommended by many doctors as a healthy way to reduce inflammation, avoid chronic disease, lower cholesterol and lose weight. In this book, Peter shows you how to make the Mediterranean diet more green by removing most meat and animal products. I chose a recipe to make that actually has shrimp and chicken in it, but most of the recipes in the book are vegetable based.

In a large skillet or Dutch oven over medium heat, heat the oil until hot but not smoking. Add the sausage and onion and cook until the sausage is browned and the onion is softened. Using a slotted spoon, transfer the sausage and onion to the slow cooker and stir well. Increase the heat to medium-high and add the chicken to the same skillet. Cook until golden brown, about 10 minutes.

Busy People's Slow Cooker Chicken Paella

Place the chicken on top of the rice mixture. Cover and cook on low for 6 hours. Now you get to relax for a while!

When 6 hours have passed, add the peas to the slow cooker; stir. Top with the shrimp, cover and cook an additional 30 minutes, until the shrimp and peas are cooked through. Now the slow cooker paella is ready to serve!

Resist the temptation to put the shrimp in at the beginning of the recipe. Shrimp can go from tender to rubbery very quickly. So be sure to add it in at the end to only slow cook for 30 minutes, and your shrimp will cook perfectly!
