Paella is one of those comfort foods I will always order in a restaurant. It is naturally gluten free, and it is filled with delicious seafood and rice. I was always intimidated to try to make it. Maybe it was the fancy-sounding ingredients?
Unfortunately, paella can also be a very expensive meal to create. Shrimp, mussels, and other specialty meats and seafood prices add up really fast.

I have always thought that paella is a showstopper meal that is perfect for entertaining. It not only has a beautiful golden color from being cooked with saffron threads but having lots of seafood and meats slowly cooking in the rice adds a beautiful depth of flavor that bursts through with every bite.
Step 3: Add the thawed seafood and canned diced tomatoes. If you want to get fancy, toss in some mussels or clams. These are inexpensive and can add some pizzaz to this gluten free paella.
Step 4: Add the rice and continue to cook the paella on medium heat until it boils. Once it comes to a boil, turn the cooking temperature to low. Stir frequently.

Step 5: the liquid will continue to cook down. When it is gone, and your rice is tender, the paella is ready to serve!
You can use a wide variety of seafood and meats in your seafood paella recipe. Chicken, sausage, mussels, fish, clams, and shrimp are most commonly used. My kids love shellfish of any kind; as long as there is no fish in this recipe, they will eat it up. (My kids are funny about fish.)
Trader Joe's sells a mixed seafood bag in their frozen section, priced really low. I love to use this instead of expensive seafood in my paella recipe.

What types of paella are there? Spaniards themselves differ on what is the most classic, authentic paella recipe. Alex and I have eaten paella in Valencia, Barcelona, and Madrid, and all of them have been vastly different. There are four main types of paella:

A paella pan is a large round, shallow pan with handles used for cooking paella. The shallow shape lets rice cook consistently and lets it dry out more than it can in a skillet. Cauliflower Rice Paella
Don’t have a paella pan? Don’t worry! Make this paella in your largest skillet. The larger the better! You may need to adjust the cook time slightly if you are using a skillet.
Paella pan care instructions:Paella pans are made of carbon steel and can rust. Make sure to dry the pan completely after cleaning it, and rub it with a bit of vegetable oil to prevent rusting.
The most authentic paella rice type is called bomba rice. Bomba rice is a white short grain rice. You can also use Arborio rice, which is easier to find but can result in a gummier texture than bomba. Either work! For this recipe we tried bomba and felt like it had more consistent results. Recipe: Paella Style Rice With Shrimp
This is an authentic style paella recipe, so it uses two special spices to get that traditional flavor. Here’s what to know:
Once all the ingredients are added to the pan in paella, here’s what to do…or really, what not to do. Don’t stir it! Please repeat: no stirring allowed. The broth and spices boil through the rice, leaving everything perfectly flavored and cooked.

The best rice to use is Bomba Rice because it has the ability to absorb twice the amount of liquid than regular rice without getting mushy. This short-grain Spanish rice will also absorb all the flavors of your broth, seasonings, and oil too. Another popular rice for paella is Calasparra Rice and would be my second choice for making authentic paella.
Quick And Easy Paella
I buy paella rice online because it's not readily available in many mainstream stores. You might find it in specialty or ethnic shops though.
However, if you can't find them, the next best replacement is Arborio Ricewhich is commonly used for Risotto. It gets super creamy when liquid is stirred in slowly. Paella is not meant to be creamy, so you definitely don't want to stir the arborio or you'll end up with risotto. In fact, you shouldn't stir paella at all once the broth has entered the pan.
Saffron Threads give paella its distinct golden color and flavor which is somewhat earthy and floral. It's very subtle but really finishes the dish. It can be a little costly, so if it's not in your budget you can replace it with turmeric. It will have a different flavor, but will still
